try using tab completion in CLI after /subsystem=mail/mail-session=
i think it should be something along the lines:
/subsystem=mail/mail-session=java\:jboss\/mail\/Default/custom-server=smtp/property=mail.smtp.from:write-attribute(name="value", value="new@new.de")

What does your jboss-cli show when you enter
/subsystem=mail/mail-session=
and then enter the tab key?
