Server adapters in Eclipse allow you you interact with the server they're bound to.
In case of OpenShift, the server adapter allows you to publish the changes in your project (the project that you imported to your local workspace in the OpenShift application wizard) to the OpenShift Paas (application).
Since OpenShift deals with git repositories, the server adapter's more or less a shortcut for pushing your local git clone to it's origin.

maxandersen Feb 21, 2012 6:19 AM (in response to adietish)stsch, the easiest way to get started with it is to use the OpenShift Express Application Wizard which will guide you through getting an OpenShift project up and running on this OpenShift server.

yep, I already got to this point, Andre describes WHAT I can do with the plugin but not HOW to do it. Clicking through some menus and dialouges I still miss /cannot see the function to deploy and run my application locally. What would be the clickpath to accomplish this?

Deploy to OpenShift: use a OpenShift Server.
The click path is the same for both on how to deploy/publish and you can take the same app and deploy locally as well as to openshift as long as they are Eclipse WTP projects buildable with Maven.
