That's not accurate. JBoss AS 7.0 has Java EE6 web-profile support http://www.oracle.com/technetwork/java/javaee/overview/compatibility-jsp-136984.html. So you can deploy EE6 applications which just need the technologies available in web profile (plus a few more techs like JMS that's part of our "preview" download http://www.jboss.org/jbossas/downloads.html).

What kind of services?
If your ultimate goal is to migrate to AS7 then I would recommend that you skip the AS6 migration. AS7 is vastly different from its previous versions from a developer and end user point of view. So first migrating to AS6 and then to AS7 within a few months wouldn't probably be a good idea.

By services, I mean ears that have no war, only singleton ejb services.and/or stateless enterprise beans (accessible via RMI). I could find no examples of how to create those. All the examples seem to concentrate on wars and restful services.

Remote EJB invocations isn't currently available in AS 7.0. That will be implemented by AS 7.1.
